So making chili again has been a long time coming… I don’t think I’ve made it in 3-4 years and when I did… I left out two essential delicious B’s (Beer and Bacon). But in the wisdom I’ve acquired throughout the years, I did not make that mistake again. Without further adieu:

Beer, Beef, and Bacon Chili:
2 White onions chopped
1.5 lbs of beef (You may be able to use more than this)
4 strips of bacon
1 Green Bell Pepper chopped
2 Jalapenos chopped
A bunch of dashes of tabasco
1 bottle of dark beer (I used a dogfish head IPA… Thanks Dave!)
1/3 cup chili powder
1/4 cup worcestershire sauce
Salt
Pepper
Red Pepper Flakes
60′ish ounces of tomatoes of your choice (I used crushed)
30′ish ounces of beans of your choice (I used half pinto and half kidney)
Shredded Cheddar Cheese
Cook bacon until crispy and set aside. Brown meat while applying salt and pepper. Drain grease and add beef to large pot along with all crumbled bacon, bottle of beer, drained and washed beans, and all the spices and veggies. Stir and bring to a boil before reducing heat and cooking at a simmer for 2′ish hours. Supposedly you should then refrigerate for 2 days before eating but I couldn’t wait… I shall report back on the taste following but as of last night… I tossed some cheddar atop the warm chili and man… It was delicious. Naturally, I’m glad it tasted so good as I’m going to be eating for it the next 20 meals with how much I made… Zoom zoom
